Potato Gratin

Stuff

  • 3 -4 medium Potatoes, sliced 3 mm thick
  • 1 medium Onion, fine sliced – alternatively use 2 – 3 shallots
  • Fresh chilli, fine diced [Optional]
  • Salt & pepper to taste
  • 2 tblsn butter
  • 2 tblsn flour
  • ½ tspn salt
  • Approx 1 1/3 cup milk
  • 1 cup good tasty cheese, grated

Method

  • Preheat oven to 200 degrees
  • Butter a tall sided oven capable dish
  • Layer ½ the potato slices in the dish – season with salt and pepper. Sprinkle with chilli (if using)
  • Layer onion in the dish – season with salt and pepper. Sprinkle with chilli (if using)
  • Layer the remaining potato slices in the dish – season with salt and pepper. Sprinkle with chilli (if using)
  • Melt butter in sauce pan. Add flour and salt. Stir constantly and cook for approx. 1 minute
  • Stir in the milk and cook until sauce thickens
  • Add the cheese and stir to combine and until the cheese is melted
  • Pour the cheese sauce over the potatoes
  • Cover with tin foil – cook for 2 hours
