Stuff
- 3 -4 medium Potatoes, sliced 3 mm thick
- 1 medium Onion, fine sliced – alternatively use 2 – 3 shallots
- Fresh chilli, fine diced [Optional]
- Salt & pepper to taste
- 2 tblsn butter
- 2 tblsn flour
- ½ tspn salt
- Approx 1 1/3 cup milk
- 1 cup good tasty cheese, grated
Method
- Preheat oven to 200 degrees
- Butter a tall sided oven capable dish
- Layer ½ the potato slices in the dish – season with salt and pepper. Sprinkle with chilli (if using)
- Layer onion in the dish – season with salt and pepper. Sprinkle with chilli (if using)
- Layer the remaining potato slices in the dish – season with salt and pepper. Sprinkle with chilli (if using)
- Melt butter in sauce pan. Add flour and salt. Stir constantly and cook for approx. 1 minute
- Stir in the milk and cook until sauce thickens
- Add the cheese and stir to combine and until the cheese is melted
- Pour the cheese sauce over the potatoes
- Cover with tin foil – cook for 2 hours
