Beef Tartare

Stuff

Tartare

  • 2 – 3 anchovy fillets, diced
  • 1 – 2 cloves garlic, peeled & crushed
  • 1 tspn capers
  • 2 – 3 raw egg yokes
  • 2 tspn Dijon mustard
  • Salt
  • Freshly ground black pepper
  • 1/4 cup olive oil
  • 400 g freshly beef fillet, ground or diced very fine
  • 1/4 cup minced shallots
  • 3 dashes hot sauce (such as Tabasco)
  • 3 – 4 dashes Worcestershire sauce
  • Fresh red chilli, fine diced or 1/4 tspn crushed dry chille flakes

To Serve

  • 4 tblspn boiled egg whites, fine diced
  • 4 tblspn boiled egg yolks, fine diced
  • 4 tblspn red onions, fine diced
  • 4 tblspn fresh parsley leaves, fine chopped
  • 1 – 2 raw egg yokes
  • crackers or toasted bread

Method

  • Combine all of the tartare stuff
  • Place a pile of tartare in the middle of a large plate with 1 or 2 raw egg yokes on top
  • Surround with a pile each of ;
    • diced egg white
    • diced egg yoke
    • diced red onions
    • fine chopped parsley
    • toast or crackers
