Vinaigrette – for Green Salad


  • 1 good sizes clove garlic, diced medium fine
  • 2 – 3 coriander root, diced fine
  • ½ tspn flaky salt
  • 2 – 3 tblspn extra virgin olive oil
  • 2 – 3 tblspn fresh lime juice
  • ½ tspn fish sauce
  • good pinch chillie flakes or fresh red chillie, fine diced
  • fresh ground pepper


  • In a mortar and pestle crush the garlic, coriander root & salt with a dash of oil – crush into a smooth paste
  • Add the olive oil, lime juice, fish sauce, chillie flakes or fresh chillie and ground pepper to taste
  • – mix with a spoon or wee whisk


  • about 50 mil
