Roast Duck Breast

  • 4 duck breasts
  • 2 tbspn salt
  • 2 tbspn white pepper
  • 2 tbspn fresh chopped garlic
  • 2 tbspn dried thyme
  • 1 tbspn onion powder
  • 1 tbspn olive oil

  • Preheat the oven to 180 degrees.
  • Mix the salt, pepper, garlic, thyme and onion powder in the mixing bowl.
  • Heat an oven-suitable skillet to medium-high. Add the olive oil.
  • Coat the duck breasts with the dry rub.
  • Place the breasts in the skillet skin-side-down once the oil is heated. Cover and allow the breasts to brown in the pan for about 5 minutes or until the skin begins to brown slightly. Turn the breasts and cook for five more minutes.
  • Place the skillet in the preheated oven. Bake for approximately 5 minutes for medium rare, or roast the duck for approximately 15 to 20 minutes if you prefer it to be cooked more on the well done side.
