Cup Cakes – Gluten Free

Stuff

  • ¼ cup butter, softened
  • ¾ cup sugar (1/2 plain white sugar – ½ castor sugar)
  • 2 eggs
  • 1 tablespoon vanilla extract – Alternative use other flavoring (eg raspberry)
  • Colouring – optional
  • 1 ½ cup gluten free flour (we used Orgran all purpose plain flour)
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk

Method

  • Pre heat oven to 180 degree
  • Cream together butter & sugar
  • Add eggs & vanilla and mix to combine
  • In separate bowl combine flour, baking powder & salt
  • Add ½ the flour mixture to the butter/sugar – stir to combine
  • Add the milk and remaining flour – stir to combine to form a smooth batter
  • Put batter in cupcake paper cases – ½ full
  • Bake 12-15 minutes until light golden brown on top
