Crepe – Gluten Free

Stuff

  • Approx 50 g unsalted butter
  • 1 good size egg
  • good pinch of salt
  • 1 cup gluten free flour – I use Orgran all purpose plain flour
  • 1 cup sparkling water
  • 1 cup milk
  • butter – for frying 

Method 

  • Melt butter. Add egg and salt – beat
  • Add the flour, sparkling water & milk – mix well to ensure no lumps
  • Heat pan to mid heat. Add small knob of butter and spread around pan with brush
  • Hold pan on approx 30 degree angle – pour mixture in at top of pan and move the pan to make the mixture spread evenly and thinly. Spot patch if gaps or uneven.
  • Once set and edged starting to curl up (going brown under) carefully grab edge at 2 spot and quickly flip over

Quantities

  • Makes about 8 crepe

Note

  • For reduced quantities reduce the flour, water & milk evenly – eg 3/4 of each
