Banana Bread – Gluten Free


  • 250g sour cream or yogurt
  • 1 tspn bicarbonate of soda (baking soda)
  • 100g unsalted butter, melted
  • 125g castor sugar
  • 2 eggs, beaten
  • 250g plain gluten free flour (I use Orgran)
  • 1 tspn baking powder
  • 1 tspn Xanthan Gum
  • 1-2 tspn ground cinnamon
  • Approx 300g very ripe banana, mashed (approx. 3-4 bananas)
  • 45g brown sugar – Optional
  • 30g slithered almonds, chopped – Optional


 Pre heat oven 180 degrees C

  • Grease and line loaf tin
  • In large bowl whisk together sour cream and bicarbonate soda. Leave for 5 minutes to infuse
  • Then stir in the butter, sugar and beaten eggs
  • Sift the flour, baking powder, gum and cinnamon – fold into the other mixture – followed by the banana
  • Put in the lined loaf tin – sprinkle on top with the brown sugar and almonds – Optional
  • Bake for 1 – 1 ¼ hours. Cool in tin for ½ an hour before pulling out by the paper


  • 1 No. 10 cm x 20 cm loaf


For non-gluten free – replace the gluten free flour and Zanthan gum with regular plain flour
